The Nakiri is used with a pushing cutting technique. Traditionally in Japan, it is used for peeling, cutting, and chopping vegetables and herbs. The blade of this knife has been sharpened with the Honbazuke honing on a wet stone. In this traditional Japanese hand honing, the blade is sharpened and polished in three steps, giving the edge the fine surface and high sharpness for which Japanese knives are famous. The FRIODUR blade has been ice-hardened, making it particularly edge-retentive and very flexible. The knife was crafted in Seki, a traditional Japanese center of sword and knife manufacturing. It combines Japanese beauty and sharpness. The core steel is surrounded by 48 layers.
