The fine-edged Santoku - Japanese for "three virtues" - is characterized by three cutting techniques. With this Asian multitasker, you can chop garlic, slice cucumbers, and dice onions. The MIYABI Black 5000MCD series is a true masterpiece. The blades of this series are made from ultra-premium steel and are unsurpassed in sharpness. Exquisite Japanese craftsmanship merges with German engineering to create the ultimate kitchen knives. The blades are made from MC66 steel with micro-carbide powder, hardened to an impressive value of 66 on the Rockwell hardness scale. The result is an exceptionally sharp and durable blade that is also highly corrosion-resistant. The authentic, thin Japanese profile blades are clad with 132 additional layers of steel, resulting in a beautiful flower damask pattern. The sharpening is done using the traditional three-step Honbazuke method. The handle of the Miyabi Black series is crafted from precious Bigleaf maple wood and stained with black ash. The grain and color of the black ash provide a beautiful contrast to the damask pattern of the blade. The handle is crafted in the traditional "D" shape, with a rounded back and heel, offering optimal ergonomics for fatigue-free cutting. Handcrafted in Seki, Japan.
