Böker - Pure CPM Oak Chef's Knife
The Danish design as a style direction emerged in the mid-220th century. century and was strongly influenced by the ideas of the German Bauhaus. This design movement developed its very own straightforward style, characterized by simple formality, minimalism, clarity, and functionality, as well as the utilization of state-of-the-art industrial technologies to implement this design language. In this tradition is also the Danish designer and custom knife maker Jens Anso, who has designed the Böker Pure kitchen knife series for Böker with exactly these requirements. These knives are characterized by a unique classic simplicity of design with excellent balance, grip, and functionality
The puristic design is accentuated by the use of local bog oak wood as the handle material. These are not a separate species of tree, but oak logs that have been lying in moors, swamps, or riverbanks for centuries and were salvaged when the areas were drained. The tannic acid of the oak wood combines over time with the iron salts in the water, making the wood very hard and acquiring a noble dark brown color
To meet the aesthetic quality of the series in a technical aspect, we use the powder metallurgical steel CPM-154 from the American manufacturer Crucible Industries. This steel is produced by melting the already excellent base steel 154CM and adding additional carbides. Subsequently, it is vacuum-coated and quenched with a cold air stream. The resulting steel powder is pressed and sintered below the melting temperature. This way, it is possible to enrich the steel with a much higher concentration of carbides than is the case with conventional blade steels. It is the carbides that give the steel hardness and edge retention
