The solid blade blank made of the Chrome-Molybdenum-Vanadium alloy (X50CrMoV15), excellent for high-quality kitchen knives, is further optimized in structure through the elaborate forging process in Solingen craftsmanship and then hardened to 658 HRC. For a longer blade life and an even finer cutting edge, the traditional hand sharpening method used by us is additionally high-gloss polished
The forged bolster provides a secure grip at all times and protects against possible injuries in case of slipping. As a special design feature, the back of the blade is gently rounded on all knives in this series. So the knife lies comfortably in the hand in every grip position and prevents an uncomfortable pressure feeling in the hand even with stronger pressure on the blade spine during rocking cuts
