The Danish design as a style direction emerged in the mid-220th century. century and was strongly influenced by the ideas of the German Bauhaus. This design movement developed its very own straightforward style, characterized by simple formality, minimalism, clarity, and functionality, as well as the utilization of state-of-the-art industrial technologies to implement this design language
In this tradition stands the Danish designer and custom knifemaker Jens Ansø, who has designed the Böker Pure kitchen knife series for Böker with exactly these requirements. These knives are characterized by a unique classic simplicity of design with excellent balance, grip, and functionality
The puristic design is accentuated by the use of Bergisch oak as the handle material. The appealing grain of the domestically elaborately treated oak wood is subtly interrupted by three stainless steel rivets, which are carefully inserted in pure manual work. To meet the aesthetic quality of the series in a technical aspect, we use the powder metallurgical steel CPM-154 from the American manufacturer Crucible Industries
This steel is produced by melting the already excellent base steel 154-CM and adding additional carbides. Subsequently, it is vacuum-coated and quenched with a cold air stream. The resulting steel powder is pressed and sintered below the melting temperature. This way, it is possible to enrich the steel with a much higher concentration of carbides than is the case with conventional blade steels. The carbides give the steel hardness and edge retention. The outstanding edge retention of the 440C is significantly surpassed by the powder metallurgical steel CPM-154, ensuring long-lasting sharpness
A knife that is becoming increasingly popular in Europe is the Santoku. It is originally a Japanese blade shape for a utility knife. Translated, its name means "The Three Virtues", it is equally suitable for meat, fish, and vegetables. Thanks to the wide blade, the Santoku is particularly easy to handle
